In 2009 after my life changed I knew that I needed to help people see they too could transform their own lives and I have been coaching ever since. In early summer 2008 after a routine Doctor visit I began a weight loss journey to keep from having to take blood pressure and cholesterol pills. She gave me 3 months to lose at least 30 pounds and quit smoking and I did it and pretty quickly. I actually had set a higher goal for myself and wound up losing 60 pounds. I have an all or nothing personality so for that time I focused on weight loss and not much else. Problem was when I got “done” I went right back to doing what I always had and the weight began to come right back on. This was the beginning of what has been an amazing journey for me. What I have learned is, my life has everything to do with my weight and that Building the best life is the best way to manage my weight. My faith in Jesus is the foundation. In these past years I have faced many challenges and made many changes. Life is not perfect but I am in a much better place than I ever could have imagined. I am a wife, a mother, a daughter, a sister and a friend and I hope that sharing a little of myself will help on your journey to your best life .       <image:caption>1 pound white button mushrooms 2 tablespoons water 1⁄4 cup dried Italian-style breadcrumbs 2 tablespoons Parmigiano Reggiano cheese, grated 2 tablespoons Italian parsley, minced 1⁄4 teaspoon thyme (fresh or dried) 1 clove garlic, minced 1/4 teaspoon kosher salt black pepper to taste 2 tbsp olive oil to drizzle olive oil spray Preheat oven to 350 degrees. Slice off the bottom of the stems; then, use a moist paper towel to gently remove any dirt from mushrooms. Quarter or halve the mushrooms, depending on the size. Sprinkle water in the bottom of a 13 x 9 baking dish then place mushrooms in a single layer on top of the water. In a small bowl combine next six ingredients: breadcrumbs through salt/pepper. Sprinkle mixture evenly on top of the mushrooms. Drizzle evenly with olive oil then spray the top with olive oil spray so it’s evenly coated.       <image:caption>Super Easy and SUper delish! Best part is no need to peel Preheat oven to 425°F. Scrub the outside of the squash with a brush until very clean. Cut ends off to create two flat edges. Cut in half lengthwise and scoop out seeds. Cut into 1/4- to 1/2-inch slices, keeping the size of the slices consistent. Rub, toss, or spray with olive oil so both sides of each slice are coated with oil. Sprinkle with salt and pepper and spread onto baking pan in a single layer. Place in preheated oven and roast for 20 minutes. Flip each slice over and roast for another 15 minutes or until golden brown and crispy on the outside and tender on the inside. I didn't have the self rising flour so I made my own Self-rising flour is a combination of all-purpose flour, baking powder, and salt. ... The blend is typically comprised of 1 cup of all-purpose flour plus 1 1/2 teaspoons baking powder and 1/4 teaspoon fine salt (thank you google) 2 Ingredient Bagels Makes 2 3sp bagels Ingredients 1/2 C fat free plain Greek yogurt 1/2 C self rising flour Pinch of salt 1 egg, beaten for an egg wash Everything seasoning Directions 1. In a large bowl, add yogurt first, followed by salt and self rising flour. Use a rubber spatula to mix together. It will be crumbly at first which is totally normal. Meanwhile bring a large pot of salted water to a boil and preheat over to 450 degrees. 2. Flour your hands and work surface and begin kneading. I knead my dough in the bowl because its less messy. Knead until you can easily form a ball, about 20-30 turns. 3. Cut the dough in half. Roll each section of dough into a long rope about 1/2-3/4″ in diameter. Pinch the two ends together to form a bagel shape. 4. Carefully drop the bagels into the boiling water using a spatula so it doesn’t break apart. Allow to boil for about a minute (the bagel will float to the top) then flip it over using the spatula and boil for another 30 seconds. At about this time you’ll be thankful you didn’t skip this step because they will get much larger and fluffier. 5. Remove bagels and transfer to a parchment lined cookie tray. Using a basting brush lightly spread the egg wash over the bagel then sprinkle with seasoning of choice. Bake at 450 for 20 minutes (give or take) until golden brown. You may want to broil them to get them a little crispy or crank your oven up to about 550 for 1-2 minutes to brown them a little more.</image:caption>

Preheat broiler to high. Coat a large rimmed baking sheet with cooking spray. Season steak with ½ tsp salt, cumin, ¼ tsp garlic powder and pepper to taste. Arrange on prepared pan. Broil on top rack 4 minutes. Turn; broil 1-2 minutes. Transfer steak to a cutting board; tent with foil. Reduce oven to 450°F. Coat pan with cooking spray. Four 6-ounce boneless, skinless chicken thighs 1 teaspoon kosher salt, divided ¼ cup honey ¼ cup Dijon mustard 3 teaspoons fresh thyme leaves, divided 1 pound asparagus, trimmed and chopped 1½ cups cauliflower florets 1 medium red onion, chopped, layers separated 1 large red bell pepper, chopped 1 tablespoon extra-virgin olive oil 1. Position one oven rack in the center and the other 6 inches below the broiler. Preheat the oven to 400°F. 2. Season both sides of the chicken with ½ teaspoon of the salt. Transfer to a plate. In a small bowl, combine the honey, mustard and 1 teaspoon of the thyme. 3. In a 9-by-13-inch baking dish, toss together the vegetables, olive oil, remaining ½ teaspoon salt and remaining 2 teaspoons thyme. Roast on the center rack for 10 minutes, then remove the baking dish from the oven. Toss the vegetables and then place the chicken on top. Preheat oven to 400°. Cut zucchini in half lengthwise and using a spoon or melon baller, scoop out flesh, leaving 1/4″ thick. Chop the scooped out flesh of the zucchini in small pieces and set aside.       <image:caption>One Pan Pepper Steak 1.5 lbs lean steak ( I used london broil) 1 tablespoon corn starch cooking spray 1 red bell pepper 1 onion 1/4 c reduced sodium soy sauce 3 cloves garlic (used the frozen cubes) 1 tsp ginger (I use the frozen cubes) 1 tablespoon brown sugar (used truvia brown sugar) 1 tsp rice wine vinegar Mince the garlic cloves. Whisk together the soy sauce, garlic, ginger, sugar and vinegar in a small bowl to form the sauce. Set aside for later. Thinly slice the flank steak in strips. Toss in a bowl with the corn starch. Set aside. Thinly slice the red bell pepper and onion. Heat a wok (or large frying pan) over super high heat. Once the pan is heated, add cooking spray. Add the the pepper and onion strips and sauté them until they are blistered-looking and begin to cook down. They should be slightly soft, but not mushy. This should take around 10 minutes. Remove the peppers and onions from the pan once they are cooked. Add more cooking spray to the pan. Add half of the coated beef strips to the pan, making sure the beef is spaced apart. This allows it to sear, rather than overcrowd in the pan and steam. Remove the first batch from the pan. Spray the pan again and cook the second batch of beef.       <image:caption>Chicken Pot pie soup A skinnytaste recipe (I made a couple little swaps) 1/4 cup flour, to make gluten-free use 2 tbsp cornstarch instead 2 cups fat free chicken broth 4 cups fat free milk 1 large celery stalk, chopped 1/2 medium chopped onion 8 oz sliced baby portobello mushrooms fresh ground pepper pinch of thyme 10 oz frozen classic mixed vegetables, peas, carrots, green beans, corn 2 potatoes, peeled and cubed small 16 oz cooked chicken breast, diced small salt Combine 1/2 cup of the chicken broth with flour in a medium bowl and whisk until well blended. Wearing rubber gloves, cut peppers in half lengthwise and scoop out the seeds and membrane. Combine cream cheese, cheddar and scallions in a medium bowl.
